Recipes

These recipes were originally put together by Henrique Silva, who forwarded it to a few friends, who forwarded it to more friends.

I'm including a couple of things that appear in the book, and an extra dessert. (Note: B. can you please ask Henrique if I can post the whole thing?). Here they are the originals, followed by the English versions (my translation).

1. FEIJAO COM OLEO DE PALMA (Dendem)

INGREDIENTES:

OLEO DE PALMA
1 CEBOLA
2 DENTES DE ALHO PICADO
FEIJAO COZIDO

PREPARACAO:

Numa panela refogue um pouco a cebolas e os alhos com o oleo de palma. Junte o feijao cozido (pode ser de lata) e acrescente mais um pouco de oleo de palma. Deixe apurar ate ficar com o molho grosso. Sirva acompanhado de peixe grelhado (carapau, galo) e de banana madura e de farinha de mandioca torrada (FARINHA DO MUSSEQUE).

1. Beans with Palm Oil (aka Dendem)

Ingredients:

Palm oil
1 onion
2 garlic cloves chopped
Prepared (cooked or canned) beans

Steps:

In a pot heat the onions and garlic with palm oil. Add the cooked beans and more palm oil. Let cook until it becomes a thick sauce. Serve with grilled fish (mackerel; or roast chicken if preferred), plantains, and roasted manioc flour (aka musseque flour).

2. CAPURROTO ou CAPUCA

E uma bebida alcoolica destilada a partir do acucar, so que tem uma caracteristica muito peculiar. E acrescido ao acucar fermentado "Carvao de pilha" (dentro das pilhas existe um carvao que separa as cargas e esse carvao que e retirado das pilhas e introduzido na CAPUCA, vindo a dar um efeito "Enlouquecedor".

2. Capurroto or Capuca

Capurroto is an alcoholic beverage distilled starting with sugar, but it has a special characteristic: to the sugar is added pickled "battery carbon." Inside batteries there is a stick of carbon, which is removed and introduced into the fermenting drink. This gives the drinker a "Craziness" effect.

3. BOLO DE BATATA DOCE

INGREDIENTES:

1 KG. DE BATATA DOCE
1/2 KG. DE ACUCAR
4 GEMAS
4 CLARAS
3 COLHERES DE MARGARINA COM SAL
250 GR. DE FARINHA DE TRIGO
1 FRASCO PEQ. DE LEITE DE COCO
1 COLHER (SOPA) FERMENTO EM PO
1 EMBALAGEM DE COCO RALADO

PREPARACAO:

Coza a batata doce ate ficar mole, depois passe por uma "passe-vite", ainda quente. Adicione as gemas, o acucar e a margarina e misture bem. Depois junte a farinha, o leite de coco, o fermento e o coco ralado e misture novamente. Acrescente depois as claras batidas em castelo e misture delicadamente. Seguidamente coloque numa forma previamente untada e polvilhada e eleve ao forno (180 C) durante aproximadamente 40 minutos, ate ficar dourado.

3. Sweet Potato Cake

Ingredients:

1 kg of sweet potatoes
1/2 kg of sugar
4 egg yolks
4 egg whites
3 spoons of salted margarine
250 g wheat flour
1 can of coconut milk
1 tablespoon baking powder
1 pack of shredded coconut

Steps:

Pre-heat to 180 C. Boil the sweet potatoes until mushy, heat quickly in a pan. Add the egg yolks, sugar, and margarine and mix well. Fold in the wheat flour, the coconut milk, the baking powder, and the shredded coconut and mix. Mix the egg whites until they have tips and add to the mixture. Add the mix to a cake pan greased and lined with flour and heat the oven at 180 C for about 40 minutes until done.
